Rainbow in the clouds!


Spring is here and it's all about the colors. It brings back many fond childhood memories.

The Instagram challenge #PlayOnProduce using Potato and Cauliflower inspired me to create this dish.


This is my take on childhood classic dish "Aloo Gobi" which is Potato and Cauliflower cooked with onions, tomatoes, and a blend of spices.


Here's the recipe:


Yellow: Buttered Mashed Potatoes with Ginger and Turmeric

Orange: Mashed Potatoes with Tomatoes and Red Chili powder

Pink: Mashed Cauliflower with Beetroot puree and Garam Masala

Blue: Butterfly pea infused mashed Cauliflower with Garlic and Curry leaves.

Green: Spinach tuile for that crunch!


The Cloud is a savory Meringue with Garlic, Ginger and Curry leaves.

The sauce is a traditional Kadhi (yogurt and gram flour-based soup with tempered spices).
